  • 4 large eggs
  • 100g fresh spinach leaves
  • 50ml coconut milk
  • 1 tsp coconut oil
  • 2 tsp ground TurmeriX powder
  •  ½ finely chopped garlic clove
  • 2 slices toasted sourdough bread


  1. Place the coconut oil in a non-stick pan over medium heat. Add the garlic, and lightly fry for a few moments.
  2.  Add the spinach leaves and cook for 1 to 2 minutes or until slightly wilted. Add a splash of water to the pan if they stick.
  3. In a separate bowl, whisk the eggs with the TurmeriX powder and coconut milk. Season to taste. Add to the pan, and cook for 5—8 minutes until the desired consistency is reached, stirring continuously.
  4. Serve on toasted sourdough. Enjoy!
